Café One Eleven: The restaurant will offer brunch with a 12-ounce prime rib, breakfast potatoes and three eggs, served with toast and bottomless mimosas. 9 a.m.-4 p.m. $35. For Easter dinner, the restaurant will serve braised lamb shank with polenta, honey glazed carrots and spring peas. 5-8 p.m. $34. Reservations are encouraged and can be made via the casino’s website.
360 Sports: The bar will serve buffalo deviled eggs ($10) and corned beef on rye ($16).

The Steakhouse: The restaurant will offer a brunch buffet that includes honey roasted ham, herb-crusted prime rib, shrimp and grits, seared Scottish salmon, traditional eggs Benedict and blueberry pancakes. 9 a.m.-2 p.m. $54. For dinner, braised lamb shank, gremolata and baked polenta. 5-10 p.m. $45. Reservations are highly recommended for brunch and dinner and can be made through the casino’s website.
Waters Café: A three-course meal with an entrée choice of pistachio-crusted Colorado lamb rack or pan-seared Chilean sea bass. Each entrée comes with Manhattan clam chowder to start and peaches and cream for dessert. 2-10 p.m. $42.
360 Sports: A Croque sandwich with potato salad will be served for $16.
Easter To-Go: Serves 6-8. The meal contains a honey-baked ham with pineapple and maple-Dijon glaze. Sides include broccoli cheddar soup, baby lettuce salad with strawberries, three-cheese potatoes, orecchiette pasta served with vegetables, pancetta and an arrabbiata sauce, brown butter-glazed carrots, pineapple relish and assorted rolls. It also includes a dozen assorted Easter cupcakes for dessert. Pick up is on Easter Sunday, April 17, curbside at Agua Caliente Rancho Mirage. POM: Braised boneless beef short ribs, Boursin cheese-whipped potatoes, sautéed broccolini and red currant port demi-glace. Noon-11 p.m. $36.
Rocky Mountain Chocolate Factory: The shop will offer Easter-themed lollipops, chocolate bunnies, jelly bean carrots, carrot cake, pistachio truffles, lavender and key lime creams. 10 a.m.-11 p.m.

Café: The restaurant will serve Swiss and ham-stuffed chicken breasts with wild rice pilaf, broccolini and dijon mustard cream sauce. $22.
Fiore: Three-course special starts with a salad with pear, prosciutto and candied walnuts to start; includes an entrée of lamb stuffed with spinach, feta and wild mushrooms served with potato and green beans with crushed Marcona almonds. Chocolate crème brulée served with honey and berries for dessert. 5-10 p.m. $76. Reservations recommended, available via 760-751-3100.
Drink specials: The bars at the casino will serve a Peeps Martini specialty cocktail made with vanilla vodka, Baileys, toasted marshmallow syrup, cream, Razzmatazz liqueur and a Peeps bunny. Through April. $12.
